menu items to recreate

.... Some restaurant menu items i'd like to recreate/add to my repertoire:

Pan-Roast Organic Chicken Breast, prunes, olives, preserved lemon with garlic-tarragon jus
Red-Wine Braised Lamb, pomegranate, radicchio, spinach
Heirloom Tomato Salad with Crispy Clams, Vinegar & Green Goddess Dressing
Sauteed Diver Scallops with Butternut Squash, Lemon Puree and Chestnuts


... I'm constantly battling this obsession with food/wine/cooking/baking/restaurants... I am so inspired every time I go out to out to eat, but I'm not sure if this is simply because I enjoy eating good food and the experience of dining out, or because I have a natural proclivity towards creating said experience... I'm a good cook, so far, but I'll admit that timing is not a strong point. I don't know much yet about how long it takes to cook certain foods, and even when I'm given an exact amount of minutes, I tend to over/undercook, either because I'm impatient or insecure. Hah!

Well, if nothing else comes of my love for dining out, I will at the very least always be able to whip up an excellent meal for guests/family based on what meals I have been able to recreate!
